The open seat: Insider
Four restaurants use it every week, all reached through a single personal introduction. Nobody has yet won a kitchen they didn’t already know. It needs someone who has worked a kitchen: who knows which count chefs hate, speaks the language, and can walk into a kitchen they don’t know and leave with a pilot.
- Goal for 30 days in Orbit
- 10 restaurants on a paid pilot
- Time it needs from you
- 10–15 hours a week
- A typical first week
- Run a real stock count with Tally in a kitchen you know and list every word Shiyu got wrong. Then take Tally to five kitchens nearby and ask the two keenest chefs for a paid pilot.
The patch for this Orbit
The patch is stamped on day 30 with the real number. The goal to beat: 10 restaurants on a paid pilot.
Every seat is a residency. How residency works
The split at Landing
Landing is the day the company forms. Light build. A focused tool with little to keep alive: four restaurants use it weekly, and what is left is selling and kitchen know-how.

- Insider: 55%
- Pool for later hires: 10%
From the crew
“It works offline in a walk-in fridge. We tested that ourselves; it was cold. Asking a chef for money is outside our training.”
